Our trees are planted in the fertile volcanic soil on the slopes of Mauna Loa. The soil of the Big Island of Hawaii contributes to our coffee's unique flavor profile and is the ideal type of soil to grow coffee. Some of the most longstanding and famous coffees are grown on the slopes of volcanoes.
The island breeze on the southern tip of the island provides cooler temperatures for a sustained growing season. Clouds gather overhead on most afternoons showering our trees with water and protecting them from too much sun. .
At just the right sweetness we selectively pick the ripe cherries by hand. Then we pulp and do a full-wash as we process the cherries.
We carefully watch our parchment as it dries to make sure the temperatures don't soar in the Hawaiian sun. Once the right amount of moisture has been removed from the coffee bean we store the parchment in a humidity controlled environment.
We finally embark on the artistic journey of roasting on demand, in response to your personal orders and ship to arrive full of flavor and aroma.
